KäseKnöpfle - One of my favorite dishes in Austria

First and foremost I would like to thank my amazing friends in Austria. Clemens for showing me this dish while in Dornbirn and Lisa for providing me with the recipe ! 


Ingredients: (you'll need to do the conversions) - and also note that they use a special type of flour to cook theirs in. But the word is regular flour will also do the trick.,

  •  300 g + 2 tablespoons flour
  •  4 eggs (size M)
  •  Salt
  •  Grated nutmeg (a little)
  •  3-4 tablespoons of mineral water
  •  3 onions
  •  20 g butter
  •  100 g cheese mountain
  •  1 tablespoon oil

Directions - straight from a very good and gracious friend of mine in Austria who took the time to track this down. Thank you Lisa!


300 g flour, eggs, 1 teaspoon salt, nutmeg and mineral water to a smooth, thick dough. Dough to rest for 1-2 hours. Meanwhile, peel onions, cut into thin rings and turn them in 2 tablespoons of flour. Heat pan and add butter and onions fry until golden brown. Finely grate cheese. Boil plenty of salted water and oil. From Spätzle gradually a part of the moistened "Spätzle board" type with a long knife and scrape thin strips into the boiling salted water. Bring to a boil, climb up the noodles. Remove noodles with a slotted spoon and rinse briefly in a colander under cold water. Drain and keep warm.The rest of the dough as well. Spätzle with cheese and pour the onions over it.
